Written on photo: "Hey, Mister - You'll want to rehearse this line, because you have to get it just right: "Hey, miss-tah. Throw me somethin, miss-tah!" The reward is a shower of gold and silver (aluminum) doubloons, brightly colored beads and other souvenirs. The doubloons are especially sought after at Mardi Gras in New Orleans, because each "krewe" (Carnival organization - there are more than 50) mints a special coin each year, and many of the doubloons become valuable collector's items.

Most places it's called a "crayfish", but in Louisiana it's called "crawfish," and mon ami, the way it is served by Cajun and Creole cooks hereabouts, there's no better eating this side of paradise, mais non! Louisiana is world renowned for its regional cookery, and each year proper honor is paid to the state's culinary accomplishment at the New Orleans Food Festival. "Tasting," naturally the most popular event, includes such items as, along with crawfish, boiled shrimp and crabs, oysters, jambalaya, gumbo, Acadian sausage, cochon de lait (roasted pig), red beans and rice, and many other savory dishes available in some 30 booths at Rivergate Hall. Seeing as well as savoring is the theme, and the Culinary Arts Exhibit provides spectacular sights in the food displays designed by famed Louisiana chefs. The piece de resistance of the Food Festival for true epicureans is the special gourmet dinner held at one of the city's leading hotels.
