Text, circa 1930s. Le Maison Hospitaliere. Description of the activities surrounding the Maison Hospitaliere in the French Quarter of New Orleans circa 1888, as described by the author, from the 1930s. Le Maison Hospitaliere was created by Ernestine Wiltz-Bouny, Carolie Carrejolles and Mrs. Stephen Chalaron in 1879. The short article describes the culinary interests of Mrs. Bouny and her servant Celestin. Celestin cooked small foods and them peddled them in the French Quarter to raise money. Le Maison Hospitaliere was a haven for destitute aged women of aristocratic lineage.
